ITINERARY
The itinerary listed below is available in March/April and September/October, or upon request during other parts of the year. Four weeks notice and a minimum of four cooking students are required for special scheduling.
Day one: This is a day to settle in and explore the immediate surroundings.
Day two: Morning is free to explore the sights. Class meets at 2:30p.m. and will visit the local souk to shop for the ingredients necessary to prepare our dinner.
Day three: Mornings are free to lounge around or explore the museums etc. Class will meet at 2:30 and visit the local market for the ingredients for the preparation of our evening meal.
Day four: A free day to discover for yourself the many treasures of Marrakech. No formal instruction but you are welcome to be in the kitchen as much as you want.
Day five: This is couscous day! After lunch and a visit to the souk, we begin preparation of the couscous for our evening meal.
Day six: No formal instruction. This is a time for last minute spice shopping or last minute exploration of Marrakech.
Day seven: No formal instruction. Meals will be served. Prepare for departure.
Week-long stays include cooking lessons, tours to the local SOUKS, double occupancy bedrooms with shared bathrooms, breakfast and evening meals with local wines. Lunch is available by request and is included in the price. Not included: personal trips, taxi fares, alcoholic beverages (except wine at dinner), museum fees and gratuities.
The Moroccan recipes you will prepare may include: homemade couscous, chicken tagine with preserved lemons, lamb tagine with prunes and almonds, fresh pea soup, Moroccan beet, radish/orange salads and Moroccan deserts. The recipes change with the seasons.
